My favorite Banana Bread is tender and fluffy. So unlike the confusing name, more like a cake than a bread.

It took me 2 tests to perfect the crumb but I'm very pleased with the result!
.
This Chocolate chip Banana Bread is an easy one-bowl recipe. In which the magic trick is the low and slow baking. Not much equipment needed and barely any washing up!

Finally after more than 10 years of dreaming, searching and trying I can say I'm a Baker now!
As long as I can remember I love to bake. At high school I began to orient myself for the baking profession and its training to become one. I've visited many schools and universities in the Netherlands and abroad. But never really found a place that felt like the right fit for me.
.
In 2017 took a loan to go to private Baking school to become a Pastry chef. But eventually chickend out and took an office job. Because that's what you ought to do when you have a Bachelors degree right? But also because I was anxious about the financial debt.
.
Fast forward to August 2020, I got a call from the regional papers. They wanted to do a piece about my Mystery Baking Challenge, with the title: "Jamie quit her job to bake full-time."
At that stage I left my previous fixed job (where I've worked for 2,5 years) already 2 months earlier, in the midst of a pandemic. Not because I felt rebellious and wanted to take a chance on me. But because at that stage it was not a choice anymore. As I experienced burn out symptoms for over more than a year already. Not because I had a job I sucked at. But because I had a job that was not nearly close enough of the things that bring me energy and where I'm passionate about. I learned incredible things and got beautiful opportunities where I'm still very grateful for and proud of. But when a flower does not bloom, you don't change the flower, you change the invironment. ๐ŸŒธ
.
The article in the papers eventually didn't happen because the truth of the story was not that sensational anymore. But I did start working as a cook 1 day in the week that same month wich totally made me bloom again. It took some patience but yesterday I had my first day at the sourdough Bakery where I also cook on Tuesdays. After all those years of looking for the right education now learning on the job. And it was even better than I always imagined it to be. I never was this proud of myself before.๐Ÿงก

Take your dreams seriously and never give up on them! Follow the path of your heart (It may not be straight or easy). You are meant to bloom!๐ŸŒธ

While the sun is out more and more these days it's time to change up our Breakfast games from winter to spring/summer food!
Here's the recipe for this nice bowl I made this morning for some inspiration.๐Ÿงก๐ŸŒธ

โ€ข I N G R E D I E N T S.
๐ŸŒ2 sliced Frozen bananas
๐Ÿถ50 ml yogurt
๐Ÿฅœ1 tbsp creamy peanut butter
๐Ÿ“2 strawberries wedged
๐Ÿซ10 blueberries
๐ŸŒพ2 tbsp Granola
๐Ÿซ1 tsp chocolate rocks

โ€ข How It's Done
Put half of the yogurt in your food processor or high cup (if you use a hand blender). Add the frozen banana slices, followed by the rest of the yogurt. Blend until creamy. It helps to push the remaining chuncks down with the spatula in between blending.

Transfer the banana nice cream into a bowl and add the peanut butter followed by the fruit, granola (see www.talesofpastry.com or link in bio for a nice recipe) and chocolate rocks. Enjoy! ๐Ÿงก

Oh the lovely warming smell of roasted nuts and spices in the morning. It feels both cozy and luxurious to make and eat your own Homemade Granola.

I'm a tad bit late to the party but I made a recipe for tasty Homemade Granola with nuts and spices! Warmimg in the winter and a nice counterpart with fresh fruit in the summer. ๐Ÿ“๐Ÿซ
.
Itโ€™s ready within 30 minutes and a delight to add to your breakfast, fruit salad, or desserts.

I used Chestnut honey and forrest honey but feel free to use any good quality honey you like.

Last weekend it was -13ยฐC and today it was +18ยฐC. It felt good to feel the sun on my skin and the wind in my hair again. How blissful fresh air and a bike ride can be. The world really looks differently in the rays of sunlight.

Finally tried some @artpastry_eindhoven eclairs with @cycle.of.pie. Who cycled from Tilburg to Eindhoven. ๐Ÿ’ฏ We were trying to meet up for over three quarters of a year now.

Literally did some window shopping @4funkyflavours where I found a dress that just looked like it was made for me! ๐ŸŒŒ๐Ÿงก

Roze koeken are a typically Dutch treat. Although Roze koek directly translated means โ€˜pink cookieโ€™, it is more like cake.
.
These flat, round cakes with a bright pink layer of icing bring back loads of childhood memories.
.
But the older you grow, the more you realize that the store-bought version is not nearly as good as homemade Roze Koeken (Dutch Pink Cakes).
.
They are not only fairly easy to make but also very fun! The naturally colored pink icing will brighten up any face! ๐Ÿ˜Š
