Chocolate Chip Cookie Easter Baskets recipe
This blog post is made in collaboration with HomeMade baking.
Ingredients for 6 Baskets
• HomeMade Chocolate Chip Cookies mix
• 40ml water
• Some white flour to dust
• Butter or oil to grease
• 50g dark chocolate
• Mini chocolate eggs or M&M’s
• Chocolate bunny’s or other fun shapes
Materials
• Bowl
• Electric mixer with dough hooks
• Baking tray
• Baking paper
• Muffin tin (for 6)
• Wire rack or pan coaster
• Cooking pot + glass or aluminum bowl
• Spatula
How it’s done
1. Pre-heat the oven to 200°C/ 180°C fan/gas 4. Grease the cups of the muffin tin with butter or oil and line the baking tray with baking paper.
2. Put the Home Made Chocolate Chip Cookies mix and the water in a bowl and mix with the electric mixer with dough hooks attached until a crumbly dough has formed. Take the dough out of the bowl and knead with your hand into a smooth ball of dough. You can use a little white flour to keep the dough from sticking to your hands. (In Case you don’t have an electric mixer, mixing and kneading by hand is working just fine too and maybe even more fun!)
3. Divide the dough into 6 equal parts (approximately 80 grams). From each part of the dough, take a piece of 20-30 grams and keep it aside. Now you have 6 bigger dough balls and 6 smaller dough balls. Divide the bigger dough balls over the muffin cups and press the dough evenly against the bottom and the edges of the muffin tin.
4. Bake the Cookie baskets in the muffin tin for 12-15 minutes in the pre-heated oven. It’s nice to have the cookies crispy on the outside and a little chewy inside. But if you like your cookies crispier you can bake them in the oven for a couple of minutes more.
5. Roll the little balls of dough (which you kept aside) with your fingers over the kitchen counter into strings of 12-15 cm long. Transfer the strings of dough onto the prepared baking tray and bend the strings into bows with a with of 7 cm. (The longer you roll the strings, the higher the bows will be.)
6. Take the muffin tin with the cookie cups out of the oven en let them cool down on a wire rack or pan coaster.
7. Make sure the oven is pre-heated again to 200°C/ 180°C fan/gas 4 and bake the dough bows for 8-10 minutes. Meanwhile, loosen the cookie cups from the muffin tin.
8. While the dough bows have time to cool down after baking, make an au-bain-marie set up: Fill the cooking pot with a small layer of water. Put the cooking pot on the stove with the glass or aluminum bowl on top. Bring the water to boil on the stove and melt the dark chocolate in the bowl while stirring the chocolate around with a spatula. (Make sure the water keeps simmering, not boiling. Otherwise, the chocolate may become grainy.) Let the chocolate cool down a bit so it thickens a little.
9. Use the chocolate as glue to put the cookie cups and the cookie bows together into Chocolate Chip Cookie Easter Baskets. Dip the ends of the cookie bows into the chocolate and put two little dollops of chocolate at opposite sides at the top of the cookie cups. Now stick the cookie bows into the dollops of chocolate on top of the cookie cups. Let the chocolate set for about 5 minutes.
10. The baskets are now ready to be filled with all sorts of colorful chocolate Easter eggs, chocolate bunnies, or other fun candy shapes. Hand the baskets out as a cheerful Easter treat!
